This sandwich has the perfect balance of flavors and textures with a delicious, creamy Thai Peanut Sauce! Eat it for lunch or cut into smaller bites to share! Ingredients: Sauce: 1/4 cup peanut butter - creamy or crunchy, as preferred 4 T fresh squeezed lime juice 3 t hoisin sauce 2 t tamari 2 t sriracha Sandwich Fixings: (2) 6” French baguette rolls or use a full baguette and cut into 6” lengths 1 cup of Hamama Salad Microgreens (radish would be great too!) 1/2 cup of sliced cucumber 1/2 cup of sliced sweet white onion or shallots 1/2 cup of sliced red bell pepper 1/2 cup of sliced red cabbage 1/2 cup of chopped cilantro Instructions: For the sauce:Whisk together the first 5 ingredients until thoroughly combined.
