Author: Carolyn Severin, Hamama Success Team Member Prep Time: 20 minutes Cook Time: 10 minutes Makes: 4-6 servings The best thing about a stir fry is that you can simply toss together any of your favorite ingredients. It’s so easy to customize to your liking with your favorite veggies, proteins and fresh toppers. A good stir fry is always satisfying & full of flavor, with a delicious sauce and rice to pull it all together. Ingredients: 4 tbsp coconut oil 1 head of broccoli, chopped 1 small sweet potato, chopped thinly 1 yellow squash, chopped 1 zucchini, chopped 1 celery stick, chopped 1 large carrot, chopped 1 medium onion, chopped 6 garlic cloves, minced 1 cup Basmati or Jasmine rice Stir Fry Sauce: 1 tsp toasted sesame oil 2 tsp cane sugar 1 tbsp cornstarch ¼ tsp red pepper flakes ¼ tsp dry mustard powder ½ cup soy sauce 2 tbsp dry sherry 3 tbsp water Garnish: Hamama microgreens Toasted cashews, crushed Salt and pepper to taste Instructions: Cook the rice according to the package instructions then set aside. Prepare the sauce: In a small bowl whisk together the sauce ingredients then set aside. In a medium sized skillet over medium heat, add the coconut oil and saute the onion and garlic for 5 minutes, stirring occasionally. Add the rest of the veggies and saute for another 5 minutes. Add the sauce and let the veggies simmer in it for another 5-10 minutes, until fragrant and cooked through. Assemble the rice onto a plate, add the stir fry and top with crushed cashews, fresh microgreens and salt and pepper to taste. Enjoy!
