Zesty Cauliflower Mash

Makes: 6-8 servings as a side

This simple recipe makes a beautiful side dish for the holidays and beyond! With only a few ingredients, it comes together quickly yet boasts tons of herby and garlicky flavor. The silky and creamy texture will make you forget it’s made from cauliflower! Top with more fresh garlic greens, butter or ghee, and your favorite fresh microgreens to take it to the next level.


  • 1 head of cauliflower, cut into florets
  • 1 tbsp butter or ghee, plus more for serving
  • ¼ cup Hamama garlic greens, chopped (can sub 2-3 cloves of garlic, chopped)
  • ¼ cup grated Parmesan cheese or nutritional yeast
  • 2 tbsp cream cheese or sour cream
  • ½ teaspoon sea salt or more to taste
  • Freshly ground black pepper
  • ¼ Hamama Seed Quilt (I used Zesty Mix), plus more for garnish


  1. Steam or boil cauliflower florets until tender, about 10 minutes.
  2. Meanwhile, heat butter in a small skillet over medium heat; cook and stir garlic greens (or garlic) until fragrant, about 2 minutes. Remove from heat.
  3. Transfer half the cauliflower to a food processor; cover and blend on high. Add remaining cauliflower florets, one at a time, until vegetables are creamy. Blend in garlic, Parmesan cheese, cream cheese, microgreens, salt, and black pepper.
