Zucchini Soup

This soup is incredibly flavorful with a silky smooth and creamy texture that’s totally satisfying. The best part is that it only requires a few ingredients! It’s perfect when you have an abundance in your garden or as a warming winter soup. Each bite is comforting and delicious!


  • 3 lbs zucchini, chopped
  • 1 large potato, peeled and chopped
  • 1 medium sweet onion, chopped
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 3-4 garlic cloves, minced
  • 4 cups bone broth
  • ½ tsp Italian seasoning
  • 1 tsp salt and pepper



  1. In a medium soup pot over medium high heat, add the butter and olive oil and cook your onions until softened.
  2. Add in the garlic and stir for about a minute until fragrant.
  3. Next, add in the zucchini, potatoes, broth, Italian seasoning and salt & pepper and bring to a boil. Once it starts to boil, reduce to a simmer and cover with a lid. Let it cook for 20 minutes or until the potatoes are tender.
  4. Blend the soup until smooth with an immersion blender or regular blender.
  5. When you reach your desired consistency, serve in bowls and garnish with hamama microgreens and salt and pepper to taste. Enjoy alongside some toasted baguette slices.
