Jerk BBQ Crispy Refried Black Bean Tacos with Basil Cream Sauce

Makes: 4 servings for the tacos, 4 servings for the bbq sauce

These vegetarian tacos are stuffed with a luscious bean & cheese filling, cooked up super crispy then smothered in delicious jerk BBQ sauce! Sprinkle on some extra cheese & microgreens and serve alongside a creamy basil sauce to enjoy with each bite!

Ingredients:

  • 1 (14oz) can refried black beans
  • 1 tbsp jerk wet paste
  • Monteray Jack cheese, shredded
  • 4 small flour tortillas
  • Sunflower oil, or avocado oil

 

Jerk BBQ Sauce:

  • 2 tbsp jerk wet paste
  • 2 tsp liquid smoke
  • ½ cup ketchup
  • ¼ cup apple cider vinegar

 

Basil Cream Sauce:

  • 1 cup fresh basil leaves
  • 1 cup bold basil microgreens
  • 1 shallot, chopped
  • 4 garlic cloves, chopped
  • ¼ cup pine nuts
  • 1 cup coconut cream, or heavy cream
  • 1 tsp red pepper flakes
  • 1 tbsp lemon juice
  • 1 tsp salt and pepper
  • 2 tbsp olive oil, or to your consistency

Instructions:

For the basil cream sauce:

  1. Add all ingredients to your blender or food processor and blend until smooth. Set aside in a bowl or you can place it in the fridge, covered, until ready.

For the jerk BBQ sauce:

  1. Add all of your ingredients into a small saucepan and bring to a boil. Once it boils, turn off the heat and set aside to cool.

For the black bean tacos:

  1. Pour your refried black beans into a bowl. Add in the jerk wet paste and mix to combine.
  2. Get out your tortillas, cheese, jerk BBQ sauce and a basting brush and prep your tacos. Take your basting brush to put jerk BBQ sauce onto each tortilla. Add a scoop full of the refried black beans onto one side of the tortilla and add shredded cheese on top. Fold over the other side to make the taco. Repeat until all tacos are prepped. Next, baste each outer tortilla half with the jerk BBQ sauce.
  3. Preheat a medium skillet on medium-high heat. Add in sunflower oil.
  4. Add one taco in at a time and cook for 5 minutes on either side or until crisp.
  5. When your tacos are done, place on a platter, add your toppings and enjoy with a delicious side of basil cream sauce!

*TIP: Add a little extra cheese to one side while cooking in the pan to add that extra crunch to the taco! Yum!!
