Slow Cooker Roasted Red Pepper Smoked Gouda Tomato Bisque

This rich and creamy, silky smooth bisque is to die for! Slow cook it and enjoy the aroma of the developing flavors.. Spring is upon us and when the last frost comes, get your hands on the warm and cozy bisque before summer hits!

Ingredients:
 

  • 12 oz jar roasted red peppers
  • 2 (14.5 oz) cans of fire roasted tomatoes
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 2 medium carrots, chopped
  • 3 cups chicken or vegetable stock
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • 8 oz smoked gouda cheese, shredded
  • ½ cup of heavy cream
  • 3 tbsp butter
  • 1 tsp salt and pepper

 

Garnish:

Instructions:

  1. Add the tomatoes, roasted red peppers, chicken stock, tomato paste, basil, sea salt, oregano, black pepper, onion and garlic to your slow cooker. Let this cook overnight on low.
  2. In the morning, slowly blend everything together in the pot with an immersion blender. You can also transfer the mixture into a high-speed blender or food processor.
  3. Once the consistency is to your liking, add in the butter, heavy cream and smoked gouda cheese.
  4. Make sure the bisque is smooth and creamy and cover for another hour or more to get all the delicious flavors to combine well together.
  5. Serve in bowls and top with croutons and refreshing Hamama crisp carrot microgreens! :D
