Spicy Vegan Egg Roll in a Bowl

Forget about takeout and get ready to take-in this colorful and fresh dish that serves up a favorite side in a healthier, non-fried version - minus the egg AND the roll! The best thing about this tangy asian-inspired meal is that it’s so easy to prep and delicious to eat, it may just become a new regular on your weekly menu!

Ingredients:

  • 2 tbsp sesame oil
  • 2 cups vegan crumbles (I used Gardein Beefless Ground)
  • 2 cups cabbage mix (shredded red cabbage, shredded green cabbage, shredded carrots
  • ½ cup green onion, chopped (reserve ¼ cup for garnish)
  • 1 tbsp minced ginger
  • ¼ cup cashews
  • 1 tsp sesame seeds
  • 1 cup broccoli florets
  • 1 tbsp coconut aminos
  • ¼ cup red onion, chopped
  • 1 tsp Nori Komi Furikake seasoning (I used Trader Joe’s blend - no MSG!)
  • 1 tbsp vegan spicy ranch dressing
  • Garnish with Hamama Spicy Daikon Radish microgreens

Instructions:

  1. Heat sesame oil in a large skillet over medium-high heat
  2. Add in vegan crumbles and heat thoroughly
  3. Stir in shredded cabbage and carrots, broccoli florets, green onions, red onions
  4. Add in minced ginger, cashews and coconut aminos
  5. Sprinkle in sesame seeds and Nori Komi Furikake
  6. Reduce heat to medium and cook for about 5 minutes, stirring occasionally, until heated through evenly
  7. Serve immediately in a bowl and top with vegan spicy ranch dressing
  8. Sprinkle remaining fresh chopped green onions on top
  9. Garnish with Hamama Spicy Daikon Radish microgreens

 

Tip: Take your spice-level up a notch and garnish with Hamama Hot Wasabi Mustard!
